I heard some more from our developers. In case it could be helpful for you, they are saying the following:

Matter and HomeKit are completely different protocols. In future Apple devices that support Thread, will be able to pair Matter accessories. Right now there is experimental support for Matter over WiFi devices in Apple HomeKit ecosystem. Scroll to bottom: https://developer.apple.com/homekit/ (Matter)

Apples are still working on Matter support.
Currently, You can’t pair with Matter accessories that use Thread. (80991829).
This is relevant for the Matter samples in nRF Connect SDK.

I recommend that you wait until iOS15, which I believe should officially support Matter devices.

If I understood correctly, it's possible to pair the Matter samples in nRF Connect SDK to apple Home app, if I enable Matter support in the Home app, right?

The tutorial is specific to pairing accessories running all-clusters-app in Matter repo to HomeKit, it works fine, but it's not working with the Matter samples in nRF Connect SDK.

I have

a light bulb accessory -> Nrf52840DK running light_bulb sample in nRF Connect SDK
a MATTER enabled apple TV
a MATTER enabled ipad with HomeKit App

Is it possible to pair this light bulb accessory to HomeKit? Are there any documents to explain this?

HomeKit should be able to interface with Matter accessories. This will be handled by HomeKit, see for example this tutorial by Apple on how to "Add support for Matter in your smart home app".

The Matter samples in nRF Connect SDK should be Matter accessories, which should be able to be interfaced from other devices that support Matter.
This is dependent on the clusters used. For example, a Matter accessory running the "door-lock-client" can be interfaced by a Matter device using the "door-lock-server".
