That kit will not work. You should obtain a newer version nRF9160-DK to be able to run newer modem fw and examples.

What happens if I provision new certs in nrfCloud with my own id, and flash the given certs to security tag 16842753? Do I need to update asset tracker use my id or is everything bundled within the certificate?

It is v0.7.0 and seems like it is a really old chip. I guess thats why it never shipped with an iBasis sim-card too...

Is it possible to register it as a custom board? Create my own GUID and assign certificates with AT client?

Which version of the kit is this? v0.9.0 or newer should include revision 1 (or newer).

This sounds like you have an early engineering silicon. Here's how you read the markings of the module:

If you have older engineering silicon, you must obtain a newer DK to evaluate mfw v1.2 and mfw 1.3.
