RE: Version of library LVGL used in nRF Connect SDK

This is not really controlled by Nordic or nRF Connect SDK, it is the zephyr project that is using a fork of the lvgl library:
https://github.com/zephyrproject-rtos/lvgl

I can see there is a pull request that in zephyr to update the lvgl library, so I assume this will will occur not too long:
https://github.com/zephyrproject-rtos/lvgl/pulls

If you can't wait for the zephyr project to update, then you will need to manually download and replace directly from the source:
https://github.com/lvgl/lvgl/tree/release/v8.1
