Are you exclusively looking for the dts configurations?
Or are you interested in an explanation of the different SAADC configuration options all together?

In case of the former the answer is that the dts only really for providing the bindings for the adc peripheral, in this case the nrf-saadc. You can find all the different options for this in the ncs/zephyr/dts/bindings/adc folder, under nordic,nrf-saadc.yaml.
In the nrf-saadc specific case there are not a lot of configurations here that needs changing, however.

In case of the latter I suggest that you either look them up in the Product Specification SAADC section or ask here about specific parameters that you would like to have explained in more detail.
To see an example of how the SAADC can be added to an existing NCS project please have a look at section 3.5 of this tutorial.
