Sorry for the wait.

If you want some interaction with the Mesh right away, you can use the nRF Mesh app instead.

However, from your question, I assume you want to understand how to develop custom application on other MCUs and smart phone that interact with the Mesh.

For that, I can recommend two resources:
- Nordic Semiconductor's Android nRF Mesh Library on github.com
- Bluetooth SIG's Guide for the Mesh Proxy Functions
