The pca10056 project should run on the dongle out of the box, but to be sure, you can change the board preprocessor symbol from BOARD_PCA10056 to BOARD_PCA10059 and rebuild it.

I already saw this example, but it exists just for nrf52840 (pca10056) and not for the nrf52840 dongle ble (pca10059). Can I adapt it somehow to my device?

Indeed you can use the Nordic UART service through the USB port of the dongle. We have a USBD BLE UART Example that use the USB CDC ACM protocol as a virtual COM port over the USB port, which you can use to transfer the data to the PC from the dongle.
