From any Web browser or REST tool like Postman or Insomnia, you can GET the URL api.nrfcloud.com/.../openapi.json anytime to see the most current schema of the nRF Cloud REST API. REST tools can parse that JSON output and create the collection for you.

I test with the original NCS1.9.1 nRF9160: Asset Tracker v2 on a thingy91, but I did not see the "config" content in the "reported" on Retrieve Device Shadow, do you know the reason?

Note that the device shadow examples shown must be for a device previously running Asset Tracker v1. Asset Tracker v2 no longer updates these sections of the shadow:

Instead, similar information is set upon reset or power on as device to cloud messages, which are viewable in the nRF Cloud Terminal card in the device view.
