The ShockBurst bitrate mode (nrf_esb_bitrate_t) NRF_ESB_BITRATE_1MBPS_BLE is described as '1 Mb radio mode using Bluetooth low energy radio parameters.' in the SDK documentation. I couldn't find any further references.

How does NRF_ESB_BITRATE_1MBPS_BLE differ from NRF_ESB_BITRATE_1MBPS?

The main difference between the radio modes 1 Mbps BLE and 1 Mbps is the frequency deviation in the FSK modulation, see the "General Radio Characteristics" table. There are also some small differences in the "Interframe spacing", "RX selectivtity", "RX intermodulation". All the differences should be mentioned in the RADIO chapter in the nRF528323 product specification.
