Yes, you need to connect the sensor to one of the available GPIOs on the beacon PCB. The pads marked 0, 1, 2, 3, 5, 9, 11, 20, 21, 24 is GPIOs. You should read the BLE tutorials to understand how to do advertising, setting up a custom service and characteristics, and how to use a central to scan for devices. The nRF51822-Beacon kit is not created to act as a central (this is not a typical use-case of a beacon), but it should be able to support any og the nRF51/pca10028 central examples from the SDK, with some minor changes. Note that you will have to adapt the central examples to your specific use-case.

You can use any of the examples. You need to change the board define from BOARD_PCA10028
to BOARD_PCA20006
in the preprocessor symbols settings in your project, and potentially the RAM/ROM setting. You need to check which chip version is on your beacon kit, and compare this against the nRF51822 compatibility matrix. The chip on the nRF51 DK (PCA10028) has 32 kB RAM and 256 kB flash.
If you follow the above linked tutorials, you should have a working periheral with your own custom service.
All central examples do scanning and connection to the board. You will have to write your own read function to handle reads from the peripheral. If you want to use notifications, this is used in the ble_app_uart_c example.
