What do you mean by "interrupt"? That's general concept use by basically any microprocessor today, you can find it on wikipedia or any chip architecture/part documentation. When it comes to nRF52840 specific then it is (as everything from Nordic) on Infocenter.

For information on the interrupt-handling of the ARM processors you can take a look here for the ARM M4 processor core.

For information specific to our products it is, as endnode said, stated on our infocenter. In relation to interrupts I suppose the event generation unit (EGU) might be of interest.
