Convert Ant+ to BLE with thingy?

Would it be possible to convert ANT+ signals to BLE Smart using the Thingy Hardware? of so any tips on how to get started?

Yes, it is possible, both stacks live only in SW space and Nordic provides dual ANT+/BLE stacks. Good starting point are ANT and BLE multiprotocol examples in nRF5 SDK.
