In this post they have mentioned as of 2017 we can use only 31 bytes for extended advertisement. now we can use upto 255 bytes right?!

Yes, that's true. You can advertise 255 bytes of data.
When it comes to the nRF5 SDK, you can refer to the Running Speed and Cadence Application (Peripheral) and the BLE Running Speed and Cadence Collector Example (Central) to get an idea of extended advertising.
