Can you please tell me if nRF52 microcontrollers are well suited for creating a cold cryptocurrency wallet based on them?

Do you have libraries, APIs or any other information that can help in developing this project?

Yes, there are products that have used nRF52 for products to provide secure blockchain service like wallets for crypto. I would recommend you to use nRF54 for even higher security features and processing power.
