It is possible to develop in a OSX environment (you can also run windows on a mac)
This question have been aswered before, and here is someone that is working making the heart rate application compile in osx with xcode and gcc-arm

Use Eclipse with ARM gnu and CDT plugin.
Segger jlink OSX version to flash and debug.
gcc-arm-none-eabi-4_7-2013q2 as gcc toolchain.
Last release of Nordic SDK supplies the right linker ld script.
