Is there a working sample on how use the EEPROM on the thingy for application data

Hi

I know , there are several threads on this subject, but I would like to know if there is a sample that works out of the box on the thingy91.

If not, is there an alternative way to store small amounts of persistant data ( like a boot counter) ?

I am not aware of any example no, but if you just want to save small amount of data you may check out:
