which nordic module is able to connect to minew msr01 milimeter wave radar sensor?

I have a Minew MSR01-B milimeter wave sensor and I would like to know if there is any nordic hardware that i could use to comunicate with MSR01-B sensor, get the data and send it to a Mysql database

Yes, but you probably need support from Minew: nRFConnect and the DK are both supported; the radar sensor may even be using the nRF52840 nrf52840-ms88sf31 or one of their other nRF modules
