Looking at the Product specification for the nRF51802:

Page 34, it says that the minimum operating temperature is -40°C. If you are running in Low Voltage Mode, meaning running it at 1.8V, the minimum operating temperature is -25°C.
Regarding the temperature sensor, this is used for measuring the temperature in the chip. Typically, this is not used by the application, but by the SoftDevice (Bluetooth Low Energy stack) to decide when it needs to calibrate it's LFCLK. While the softdevice is being used (e.g. when running a Bluetooth Low Energy application) this sensor's access is very restricted, because it is reserved for the SoftDevice.
