Some questions regarding pin assignment

I am using the nRF52840 in QFN48 package. I noticed that the official pin description does not specify the corresponding pins for the digital microphone clock and data. Can I freely connect them to general-purpose IOs such as P0.13 and P1.00?

Yes you can use any available GPIO pins. But it would be better to not use pins that are "recommended" for some other purposes. Other than that it should be fine to use any GPIO pins.
