Is it a good idea to use nRF51 standalone as an Application Processor and also as BLE connectivity chip? OR Is it a good practice to use a separate Application Processor?

Clearly, there is no single answer to this - it depends totally on the requirements & constraints of the particular problem at hand.
But, in general, why would you want two processors if one will do?
