can we use s120 for customized profiles?

is it possible that we can use s120 stack as a central, at this stage to work with our customized profiles? or it will support only SIG profiles

Yes, you can use the S120 with custom services. The ble_app_multilink_central and ble_app_multilink_peripherals from the SDK are examples of this.
