Currently, the nRF51822 and the S110 is not capable of keeping a BLE connection at the same time that it communicates over proprietary links, so the only current option is as you say to use two devices. You could however consider to use just one nRF51822 plus an nRF24L01+, instead of an nRF8001, nRF24L01+ and an external application processor. The former should be a simpler solution, and is what I'd primarily recommend.

The BLE stack and legacy radio stack of the NRF51822 can not operate at the same time. A solution with multiple radios (could also just be 2xNRF51) could work but you'd have to be careful to avoid using the same channel at the same time (perhaps choosing frequencies for the legacy radios that are not used by BLE).
You can definitely get the nRF8001 and nRF24L01 to work together, you may need to work on sharing the SPI. You may not need to any special channel allocation but make sure the nRF24L01 channels do not use the WiFi channels. You may want to implement a hopping protocol for the L01 as well , request at www.nordicsemi.com/.../Contact-Support-Team for a code sample.
