I believe you need terminal number as the first argument to the SEGGER_RTT_printf() function. So, in your case, it would look like:
SEGGER_RTT_printf(0,"RSSI: %d\n",p_gap_evt->params.rssi);
As to whether the params actual contain the rssi requires that the extend information is contained in the packet.
