Our workshop is using custom PCBs for other manufacturer's developer kits, and I'd like to do a similar shield for our nRF51-DK boards. Can anyone provide a KiCad project file including schematic and board?

Hi,
It should be possible to export the Altium files we provide(nRF52/nRF51) to P-CAD, and then import the P-CAD files in KiCAD. In this answer a user has done it for the nRF51.

No worries. I use KiCad for all designs, so I have now made my own symbol for the nRf52840, but I am still checking the pcb footprint for this device as its somewhat non standard, as it has 73 pins and I have not come across another device with that pin count.
I am happy to give it to Nordic, but I think I should also make symbols for the nRF51832 and nRF52832.
