As we currently don't provide any ZigBee stack, I'm not able to answer this question. This would depend on the implementation of such a stack.

But the nRF5840 will be able to run the BLE stack and the 802.15.4 stack(with a Zigbee stack on top) concurrently. - devzone.nordicsemi.com/.../
There appears to be an open source Zigbee stack already in existence
zboss.dsr-wireless.com/.../zboss
Its only posted to TI chips at the moment,but I presume that it would be a good place to start getting Zigbee to work on the nRF52840
