I have a Red Bear BLE shield and need to change the UUID

Could someone please guide me through the process?

I believe it can be done through nRF Studio which I have downloaded, but don't know how to proceed from there???

I have but still don't understand the best way forward. Red Bear state that the BLEShield.xml files need to be edited via nRf Studio ?????
