Sounds like a bug in the code, where it did not expect negative numbers.
I had the same problem with some of my code last week, as it's winter here in Australia and one of my environmental sensing beacons stopped sending valid data ( but it didn't crash)

I noticed that only the iOS app crashes but the Android app start measuring 250C instead of O C or less.
I missunderstood what you meant by "App".
You mean the iOS App and not the Application firmware.
In my case it was an application firmware problem in code I wrote.
In your case, the problem seems to be in the iOS App source code.
If the iOS source code for the app is in GitHub you could raise an "issue" in GitHub and hopefully Nordic should fix and upload a new version to Apple for approval into the App Store.
Apple now seem to only take a few days to test and approve an app update, so Nordic should be able to fix this quite quickly
BTW, If the Android app also reads the wrong value, you should raise an issue for that as well on GitHub
