The nRF6905 nRFready Basic Remote is a complete hardware and software reference design for basic 2.4GHz RF remote controls. 

What nRF24LE1 devices are included in the hardware? 24, 32, or 48 pin? Can I get a list of what is included? I was prevented from downloading documentation.

Hi, Not sure if I understand, the only difference between the different variants you refer to is the GPIO mapping, typically you can develop using the 32pin (since several pins are used for debugging), and then for instance go to production with the 24pin. Though you need to consider the pin mapping is different between the two. However all variants should still be in production and can be used. 

If you are starting a new development I would strongly consider the nRF51822 instead, the radio is bacwards compatible with the nRF24L-series, but the development tools and features are much improved.

I have a size constraint as the present chip is 4 x 4mm and I prefer QFN and would like to stay away from BGA packaging. I cannot find any chip in the nRF5 series smaller than 6 x 6mm. What development system would you recommend for the nRF24LE1?

What about 5x5mm? There is an nRF52810 QFN32 at 5 x 5 mm
