I would like to know if there is any documentation that speaks of security for push notifications. For example, that talk about security when using a nRF52 device as a beacon.

I do not believe Nordic has any documentation related to push notification security. I found this article that might be of interest for you. If you are also interested in regular BLE & IoT security, there is a lot of information on the Nordic webpages (link 1, link 2, link 3).
