Is it possible to talk TCP/IP over BLE on nRF52810 (similar to PAN profile on BT classic)? Can SD S112 fullfill this or would S132 be needed. I know memory needs are an issue for S132 on nRF52810, But we do not need 20 connections, we need just one...
It might be possible, but you will have to implement it yourself. Unfortunately Nordic's IoT SDK runs on S132 and requires a device with 64k of RAM. The reason why S132 is required is that our 6LowPAN implementation requires L2CAP with connection oriented channels which is not supported in S112.
Is this applicable for the nrf52840? meaning no TCP over BLE ?

Can nRF52810 be used for HCI via UART? The idea is to let the Linux processor run the BLE stack and offer a HCI I/F. nRF52810 has to accept HCI command and data via UART and only needs to run the radio...
Can this be done? Do you have perhaps sample for a HCI application?

The S140 and nRF52840 are not mentioned in the IoT SDK User Guide that I linked to, but there are examples for nRF52840 running on S140 included in the IoT SDK. I double checked with the IoT Team and S140 is indeed supported, but the information on Infocenter is just not up to date yet.
This example shows you how to do TCP over BLE.
That could be possible, but I'm not sure if there are any proven solutions for the nRF52810 out there yet.
Nordic doesn't provide an HCI interface in our stacks, so you would have to go with something like Zephyr, which provides a stack and even examples with HCI access for the nRF52832. Running the example on the nRF52810 seems to be problematic though.
Alternatively you can use our Serialization library.
