Convert NSData to Integer for the Hear Rate Monitor example

Greetings,

I'm experimenting with iOS and bluetooth, using the Heart Rate Monitor example. I have tried, and failed, to convert the NSData I get from the "Heart Rate" characteristic (UUID: 180D). The stream are HEXs with lengths of 2, 8, 8 and sometimes 3,9,9; in repetition.

Could you share how to do the conversion for this example and if possible explain the theory behind it, so I can use it for all my projects?
