-> what is the pinout of the TRACE connector of the nrf52840DK (PCA10056) board ?
I need to connect wires onto P0.11 and P1.00 GPIO, and the trace connector is a good candidate for that, but I don't know what are the corresponding pads.

You can download the HW files for the 52840 DK here. Assuming you have the v1.0.0 DK, the trace connectors are connected to these pins:
Then, you can take a look at the product spec here. Under Section 7, you can find the pin assignment for the 52840 SoC.
