Is there any examples or tutorials for interfacing UC8156 E-Ink display to nRF52840DK via SPI interface?

There are certainly examples of using the SPI peripheral.

Once you have mastered the specifics of the nRF52840 SPI peripheral, the rest of it is independent of the particular microcontroller - so you should be able to adapt any tutorial or driver ...
