Is there any examples or tutorials for interfacing UC8156 E-Ink display to nRF52840DK via SPI interface?

I would like to interface an E-Paper display with nRF52840DK. is there any tutorials or drivers available for that?

Maybe this could be of some help. I'm not aware of any other tutorials or drivers available for this display. Like awneil say, you should be able to do this yourself using the SPI peripheral/driver available in the SDK.
