Hi, which thickness should I use for the nrf9160 chip?

This depends on the size of the solder paste openings in the stencil. Ask your PCB manufacturer for advice.

You should ask your PCB manufacturer about this. The thickness of the stencil depends on the size (reduction) of the solder paste pads.
