Are the SES project files missing from the included examples in v3.1.0 for a reason?

There should not be any missing project files. What example do you find the project files to be missing for?

Apologies, I'd downloaded the SDK from GitHub where they'd stripped them out.
Yes, the GitHub repository comes without prebuilt project files. For that you can fetch the SDK from https://www.nordicsemi.com/Software-and-Tools/Software/nRF5-SDK-for-Mesh/Download#infotabs. You can also generate the SES project files using CMake, see Step 3: Generating SEGGER Embedded Studio project files from the "Building the mesh stack and examples" getting started guide.
