I just noticed that i have a nRF52840-Preview-DK board. Are there also schematics available?

The schematics are in the HW files (folder schematic_layout pdf files).

Note that the nRF52840-DK 1.0.0 uses the production variant of the nRF52840 (IC revision 1), so if you are making your own PCB you should use the DK 1.0.0 version.
