Where can I find s130 documentation?

How stable is the SD since I cannot find documentation and the only example is under "experimental" ?

The documentation for s130 is in the nRF51822 download page. It is the S130-SDS file (S130 nRF51822 SoftDevice Specification)

The s130 is still an alpha release and not production ready yet. It is hard to say how stable it is; it depends on your application. You have to try and test.

If you don't need concurrent central and peripheral role, you can use s120 which is not an alpha and supports non-concurrent central and peripheral role.
