You can see how to make an emulated project (PCA10040e) out of any PCA10040 project in "Software emulation of nRF52810" on the Infocenter.

Hey, where can I find the "Linker script settings" where I should be able to set the ROM and RAM end adresses.

Please check out this guide, which shows you how to change the RAM and FLASH size and start addresses. The size of the parameters will determine their end address.
