The error specified in the product specification for gain = 1.6 V, means that given that a calibration has been done, a SAADC sample will be somewhere between minimum 3% less than the actual value and up to 3% more than the actual value.

again, the accuracy is not specified in terms of the sample voltage but rather the error for a specific gain setting. The ADC offset is specified in the documentation as +- 2 bits for LSB with 10bit resolution after a calibration with a differential setting.
