Which softdevice shall I use ?

Shall I reference the demo of ble_central_and_peripheral (The power consumption shall be considerate)?

Have you seen the BLE Beacon example? This might be what you are looking for.
You can modify this example to perform a scan every so often. You may then also change your advertising data, to reflect the scan response.

Which softdevice shall I use ?

To determine compatible SoftDevices you need to confer with the nRF52810 Compatibility Matrix. As you can see, it is compatible with the SD112, which also works for the BLE Beacon examples referenced above.
