Log data continuously from Nordic Thingy 52 sensors

Hi, 

I am working on one business use case. The basic requirement is to monitor the outdoor air environment from different locations. I want to try out the initial things with Nordic Thingy 52. Where can I log the data coming from Thingy sensors? How can I do so?

I want data for around 10-15 days to start with. A web app is preferable to mobile. I have nrf52840 dongle.

You can use the dongle with the Bluetooth Low Energy app in nRF Connect for Desktop(https://www.nordicsemi.com/Software-and-tools/Development-Tools/nRF-Connect-for-desktop), connect to the Thingy:52 and enable notifications for the temperature and the other environment sensor data. The values will then be logged in hex format in a .txt document.

 We have a Thingy:52 web app here: https://github.com/NordicPlayground/webapp-nordic-thingy, it uses Web Bluetooth API. I don't see any data-logger options, but if you have experience with either React or Polymer, you might be able to add that functionality yourself.

How do I convert the hex values to something meaningful? I tried using an online converter to ASCII and String, but nothing meaningful pops up.

Tried using web app too, Thingy is detected but data is not received. It shows some battery feature unsupported kind of issue. 

Also, tried using nrfCloud with my Android phone as a gateway. But the gateway gets disconnected in few minutes by itself.
