nRF52840 and MPU

So, which one is correct?

The Driver support matrix indicates the Peripheral drivers/MPU HAL does not support nRF52840.

Both documents are correct. 

Although the ARM Cortex -M4 processor in nRF52840 has MPU, the MPU driver (MPU HAL) is not supported to nRF52840.

So, can the stack guard library be used on nRF52840 or not?

Yes, the stack guard library can support it.

The Driver support matrix indicates the Peripheral drivers/MPU HAL does not support nRF52840, the SDK common libraries/ MPU (Memory Protection Unit) driver and Stack guard can be used on nRF52840 which is used by the Experimental: Console over Bluetooth Application example. (I.e. that example uses both stack guard and MPU library.)
