Sorry for the late reply. I have some input for your question now.
LTE-M doesn't support high speed train scenario, but it does support mobility. It is likely that it can work at 200 km/h speed if you use low frequency band which has less Doppler effect.
Based on simulation, nRF91 can work but has decreased performance at Doppler shift frequency 350 Hz, which means it can support 189 km/h at 2GHz frequency, 378 km/h at 1G Hz frequency.
It is theoretical value based on simulation.
Please let us know if you have a chance to try it out in the real world.
