Peak current estimate when peripherals are on

From section 5.2.1.11 I can tell that the peak current with CPU, TX, DC/DC, HFXO running the power consumption would be 8.6n mA. However, I could not find one that included the peripherals running. How could I estimate the peak current for that scenario?

There are some numbers in the nRF52832 prod spec, f.ex: SPIM master interface electrical specifications 

Note that those numbers are for the individual peripherals and it does not include the current consumption of any clock tree, EasyDMA, etc. The best you can do determine the peak current consumption is to measure it when a given peripheral is active.

What's the difference between the different chips of the nrf series like the nrf52840 and the one you listed, nrf52832? I was trying to compare but the power and performance all seem to be the same

They are very close on the nRF52 series, though the newer nRF52833, 810, and 811 have a bit lower current consumption overall.
