There is a example project for pca10040e_s112_ble, but that's only configured for 810. I need to build for 832...

The pca10040_s112_ble project for dfu/secure_bootloader in examples is under nRF5_SDK_16.0.0\examples\dfu\secure_bootloader\pca10040_s132_ble.

arm5..., armgcc, config, iar & ses. I cannot see any project for s112...?

There is no pca10040_s112_ble project, but I think you could modify pca10040_s132_ble to load with s112 as
