According to what I know, the nRF52840 lacks hardware to support AoA as defined in BLE 5.1. Still, the web page of the device mentions that it supports BLE 5.1. What is the true behavoiur of the device?

When a device states it supports BLE v5.1 it means it has passed at least all the updated testcases for the 5.1 spec. However it does not mean it supports all the features as many of the features are optional.
As for the nRF52840, this does not support AoA. nRF52833, nRF52820 and nRF5340 does support AoA.
