I am trying to find the spi_flash_at45 under projects part, in nrf connect options however it is not provided. How can I open that example code and work on it in nRFSDK? I would be appreciated if you can explain it to me with some steps.

Since the example has an overlay for nrf9160dk_nrf9160 (be aware; overlay is not NS!), it should work given that you connect your sensor to the corresponding pins in the overlay:
To be able to import this project, you can manually point to it by clicking the three dots next to the "projects:" drop-down:
Then select the nrf9160dk_nrf9160 board.
