Can I use sdk7.2.0 softdevice instead of sdk6.1.0 softdevice?

We have developed an application based on the 6.1.0 SDK to get Bluetooth 5.0 by directly replacing the SoftDevice

What's the SD version between 7.2.0 & 6.1.0? If the version is the same , it's okay. If not, I think that you should modify the application code which is applied SD function. By the way , the SD mapping is also difference.
