What is the fastest I can update information from the sensor to the nRF Cloud in terms of information every so many seconds?

This in reference to the asset_tracker file. I know the default is 30 seconds but I am unsure as to the limit of the ENVIRONMENT_DATA_SEND_INTERVAL.

I miss-read you question at first and have changed my answer. Are you working on Asset Tracker v1? If so, it should work down to at least 5, however, lower might be unstable.

Yes, is Asset Tracker v2 any faster? If I were to write my own code, what would the limit be then?

In asset tracker (v1) the different sensor data is sent back to back every 30s by default. Each burst of sample data is arriving with little air in between.

If you i.e use the cloud client sample as a start point and try to send data  you can send data many times per second to nRF Cloud I would expect.
