what's the different between the target item in bootloader example

in the below pic, the two targe "flash_s112_nrf52_7.2.0_softdevice" and "nrf52810_xxaa_s112"

The second target is made only to load the Softdevice image to flash (Bluetooth stack), while the first one for the actual application. See "Programming SoftDevices" for more details.
